Skyline Saké: The House of Suntory

Nick Drain • Aug 16, 2021

A heritage Japanese whisky and spirits distillery, now available at Skyline Bar + Lounge.

Founded in 1899, The House of Suntory was built on the dream of it's founder, Shinjiro Torii. Embodying the harmony that exists between Japanese nature and Japanese people, The House of Suntory is a unique fusion that establishes Suntory Whisky as not only a product, but an art form.

Torii was born in the Meiji Period, when Western culture and civilization suddenly flowed into Japan. Ending his schooling at age thirteen, Torii entered into an apprenticeship at a pharmaceutical wholesaler in Osaka that carried Western liquors. There he engaged in stylish Western pursuits and mastered techniques of mixing, then developed a discriminating palate and nose. He mastered techniques of mixing and blending through his teenage apprenticeships. In the year 1899, Shinjiro Torii went independent, renting a modest house where generations of pursuit of a dream all started.

In 1923, Shinjiro Torii envisioned a whisky filled with the essence of Japanese nature and hand-crafted by artisans through a patient process of enhancing the work of nature. He dreamt of creating subtle, refined, yet complex whisky that would suit the delicate palate of the Japanese and enhance their dining experience. Though initially inspired by traditional Scottish whisky, Torii envisioned a Japanese approach by choosing a terrain and climate completely different from those of Scotland. Torii chose the region of Yamazaki, on the outskirts of Kyoto as the birthplace of Japanese whisky.

Suntory Whisky is Japan's first whisky and is unique from other whiskies due to the purity of the water used in production, the distinct four seasons in which the whiskies mature, and the Art of Blending which produces the signature subtle, refined and complex flavor.

Born from the Japanese way, speaking to the soul and awakening our senses, taking us back to where it all began. Suntory Whisky embodies the harmony that exists between Japanese nature and Japanese people and is the fusion of the delicate forces of Japanese nature itself combined with the passion and precision of the best Japanese artisans.

Skyline Bar + Lounge carries three products from The House of Suntory, the Toki Whisky, Haku Vodka, and Roku Gin.

Toki Whisky:

With toki meaning "time" in Japanese, this whisky is concept rich in meaning the world over, but particularly in Japan where respect for tradition and reinvention sparks a powerful creative energy. Inspired by that interplay, Suntory Whisky Toki brings together old and new — the House of Suntory's proud heritage and its innovative spirit- to create blended Japanese whisky that is both groundbreaking and timeless.

Haku Vodka:

Made with 100% Japanese white rice, the name Haku® means “white” in Japanese. The word can also be read as “brilliant” – a tribute to the craft of mastering a clear, clean, and luminous vodka. Filtered through bamboo charcoal, Haku® has an unparalleled soft, round, and subtly sweet taste.

Roku Gin:
In Japanese, Roku translates as the number six. Inside every bottle of Roku Gin, you will find six very special botanicals that are sourced in Japan. These represent Suntory’s commitment to only use the best ingredients harvested from the best growing areas in Japan. Every aspect of Roku Gin is crafted by Japanese artisans with a centuries-old tradition of meticulous attention to detail.

Not only are Roku Gin’s ingredients of the highest quality, many are also uniquely Japanese and, therefore, best understood by Japanese artisans. Suntory’s mastery of this process is the result of extensive experience gained over decades making gin. Suntory developed its own multiple distillation process as a result of the special features each botanical brings to Roku Gin’s perfectly balanced mix.
